Here are some of the uses for Citrus Zest
3 parts oil + 1 part vinegar is the standard vinaigrette ratio. After that, a little high-quality sweetener (raw honey, maple syrup) and citrus zest can be added. 3 tablespoons extra virgin olive oil + 1 tablespoon apple cider vinegar + 1 teaspoon raw, local honey + 1 teaspoon orange zest is my favourite dressing. SO VERY GOOD!
Cold salads (particularly grain-based salads) and slaws can always benefit from a splash of colour! Enjoy your salads and slaws with a dash of citrus zest.
A strip of lemon peel can be added to a mason jar filled with olive oil. Allow for a two-week infusion, and you’ll have a lemony-olive oil infusion!
Add a strip of citrus peel to your cup of tea to take it to the next level. Grapefruit, lemon, lime, and tangerine are all excellent choices. Ginger tea with a strip of grapefruit peel is my favourite combination! Spicy and bright.
This is fantastic on fish, chicken, or as a rim for a cocktail glass.
Martha’s Maple Orange Butter (be sure to use butter prepared from grass-fed cow’s milk!). Omega-3 fatty acids and other nutrients will be more abundant in the butter.)
Sprinkle a little zest on top of that hot bowl of soup, stew, or stir-fry just before serving. It’s astonishing how much flavour a little zest can bring to a dish.
