One of the most savory dishes of Rajasthan, which it is made with wheat flour shaped into dumplings that are crisp on the outside and soft on the inside, which are made with spicy lentils. The finishing of the dish is made with crushed bati soaked in ghee and mixed with jaggery or sugar.
Ghevar is a mixture of flour, ghee, and milk, and moistened in sugar syrup. It is shaped into a disc and coated with almonds, pistachios, and saffron. There are several varieties of Ghevar, like the Malai Ghevar or the Mava Ghevar.
Gatte ki Sabzi is one of the popular food. It is prepared with fried or Steamed gram flour balls, that are cooked in a gravy which is made of curd resulting in a tasty tangy flavor. The gravy is consumed with Rotis.
Chenna Malpua is prepared from a batter of cornflour, paneer, nutmeg powder, saffron, sugar, and ghee. This extremely sweet pancake is then deep-fried and it is soaked in sugar syrup. It is served with rabdi. Chhena Malpua is one of the tastiest dishes from Rajasthan.
Safed Maas is a meat curry that is cooked in white gravy which is prepared from cream, milk, curd, and cashew paste. It is lightly flavored and garnished with dried fruits.
