Quick Beef Stir-Fry

Ingredients

2 tablespoons vegetable oil

1 pound beef sirloin, cut into 2-inch strips

1 ½ cups fresh broccoli florets

1 red bell pepper, cut into matchsticks

2 carrots, thinly sliced

1 green onion, chopped

1 teaspoon minced garlic

2 tablespoons soy sauce

2 tablespoons sesame seeds, toasted

Cooking Instructions

Step 1

In a large wok or skillet, heat vegetable oil over medium-high heat; cook and stir meat until browned, 3 to 4 minutes. Place the beef to the side of the wok and fill the centre with broccoli, bell pepper, carrots, green onion, and garlic. Cook for 2 minutes, stirring occasionally.

Step 2

Season the steak with soy sauce and sesame seeds and stir it into the veggies. Cook and stir for another 2 minutes, or until vegetables are cooked.

Mexican Casserole

Ingredients

1 pound lean ground beef

2 cups salsa

1 (16 ounce) can chili beans, drained

3 cups tortilla chips, crushed

2 cups sour cream

1 (2 ounce) can sliced black olives, drained

½ cup chopped green onion

½ cup chopped fresh tomato

2 cups shredded Cheddar cheese

Directions To Cook

Step 1

Preheat the oven to 350 degrees Fahrenheit (175 degrees C).

Step 2

Cook ground beef in a large skillet over medium-high heat until no longer pink. Stir in the salsa, decrease the heat to low, and cook for 20 minutes, or until the liquid has been absorbed. Stir in the beans and heat until they’re hot.

Step 3

Using cooking spray, coat a 9×13 baking dish. In a shallow dish, spread crushed tortilla chips, then spoon beef mixture over them.

Spread sour cream over the meat, then top with olives, green onions, and tomato. Cheddar cheese should be sprinkled on top.

Step 4

Bake for 30 minutes, or until hot and bubbling, in a preheated oven.

Spicy Asian Ramen Noddles

Sauce:

3 tablespoons reduced-sodium soy sauce

2 tablespoons sesame oil

1 ½ tablespoons brown sugar

1 tablespoon rice vinegar

2 teaspoons chili-garlic sauce, or more to taste

1 teaspoon grated fresh ginger

3 tablespoons creamy peanut butter

Noodles:

2 (3 ounce) packages ramen noodles

2 tablespoons chopped peanuts

2 medium green onions, thinly sliced diagonally

Directions to cook

1st step

In a small bowl, combine soy sauce, sesame oil, brown sugar, rice vinegar, chilli garlic sauce, and ginger. Set aside after mixing in the peanut butter until fully incorporated.

2nd Step

In a pot, bring 4 cups of water to a boil. Remove the flavour packet from the boiling water and add the ramen noodles. Cook for 4 to 5 minutes, or until noodles are soft. Drain the noodles, retaining some of the water in case the sauce has to be thinned later.

3rd step

Toss the ramen noodles in the sauce until completely coated. If the sauce is too thick, thin it up with a small bit of the conserved noodle water until the correct consistency is achieved. The sauce will soak into the hot noodles. Serve with a garnish of peanuts and green onion.
