Ingredients for the salad
1 cup washed and drained black beans
1/4 cup finely chopped cilantro
1-2 avocados, roughly sliced
1 cup corn
1 cup halved grape tomatoes
1 1/2 cups shredded rotisserie chicken with 1/2 cup sugar-free BBQ sauce
8 cups lettuce
1/2 cup finely sliced red onion
Optional extra toppings include: tortilla chips, shredded Mexican cheese, sour cream
Ingredients for creamy cilantro jalapeno dressing
1/2 a lime’s juice
A half teaspoon of salt
1 tsp green chilies, chopped
1 jalapeño, roughly chopped, with or without seeds for added spice
3/4 cup mayonnaise (paleo)
1/2 cup cilantro
1 tablespoon honey
2 teaspoons chives (dry)
1 garlic clove
3 tbsp almond milk
1/2 cup full fat canned coconut milk
1/4 teaspoon smoked paprika
Instructions for the dressing
In a blender, purée all of the ingredients except the almond milk until smooth, scraping down the sides as needed. Adding a few tablespoons of almond milk at a time until you reach the appropriate consistency. Before usage, chill the mixture in the refrigerator.
For the salad
Toss rotisserie chicken with BBQ sauce in a medium bowl. Set aside.
Drain the beans and corn, then cut the onion, avocado, and tomato. Prep all the other ingredients and in a large mixing bowl, combine the lettuce, BBQ chicken, black beans, corn, tomatoes, avocado, onion, and cilantro. Serve with cilantro lime ranch dressing on the side.
