Have A Look At Mumbaikar’s Prestige Vada Pav With A Masala Twist

Vada pav is the most famous street food in Mumbai. Every Mumbaikar has at least tried the vada pav once in his life. But have you ever tried masala vada pav?
Here is how you make it

Ingredients

For batter

(2 Cups) – Besan, Ajwain, Baking soda, salt(as per taste), water.

For kharda(chili garlic paste), (4-5)green chilies, (5-6)garlic, salt

For aloo mixture

Oil, rai, jeera, Hing, kadi patta, kharda, turmeric powder, garam masala, salt, (3-4)potatoes, coriander, lemon juice.

For fried green chilies

Hari Mirch, salt, oil

Method

In a mixing bowl, add Besan and other ingredients of the batter and mix properly. Add some water to make a smooth batter. Mix for at least 5 minutes, the batter should not be too thick or too thin, it should be of proper consistency.
Once mixed properly, let the batter rest for a minimum of 20 minutes.

Till then we will make kharda. For kharda, add all the ingredients given above in a grinder and grind it and make a paste. Keep it aside.

Now make aloo mixture

Take a pan and put it on a low or medium flame, add oil, and heat it. Now add jeera and Rai and fry them. Once they start to crackle, put something, kadi patta, and the already prepared kharda. Mix and cook it on a medium flame for some minutes.

Now add turmeric, garam masala, and salt. Stir and cook it for 2 minutes on medium flame. Further put boiled potatoes, lemon juice, and fresh coriander. Mix and cook for 3 minutes, while mashing it. Your aloo mixture is ready. Keep it aside to cool down.

After it cools down, take a spoonful of mixture and shape in a medium size ball. Now heat oil on a low or medium flame and coat the vadas with the besan batter (which was already prepared).

Put the vadas in oil for deep frying on medium heat. Fry it until they turn crispy and brown.

For fried green chilies, take some green chilies, cut them in the middle (don’t cut them fully, just make a slight cut on them). Now fry the chilies in hot oil for a few seconds.

Now for the masala pav

Heat some butter in a Tava, add red garlic chutney, some garam masala, some pav bhaji masala, coriander, mix it, and cook on medium flame. Now coat the pav with that masala paste from all sides. Add chopped onion and put the vada inside it.

Serve the vada pav with those fried green chilies, with some coconut chutney.
