Jalebi is a popular Indian dessert served during festivals and special occasions and when this jalebi is combined to make a cheesecake it is lip-smacking

Ingredients :

10-12 biscuits

2 spoon butter

condensed milk( 400gms)

cream( 200ml)

curd

11/2 spoon gelatine melted in ¼ cup of warm water

Jalebis (8-10)

saffron strands (20-25)soaked in ¼ cup of water

2 spoon cornflour

2 spoon sugar

4-5 Jalebis for garnishing

Recipe :

Firstly make the base mixture by crushing the biscuits in a mixer grinder.

Mix this with butter nicely and spread this mixture on the base of a loose bottom cake tin, by squeezing it nicely with the back of a big spoon, so that it remains on the base properly.

Now put the tin in the refrigerator for half an hour to set.

Till then make the cream mixture, in a bowl mix together milk, cream and curd then blend them well with a whisk, until it becomes smooth.

Now heat the dish, dissolve gelatine in the microwave for 40 seconds, blend it nicely so that there are no lumps. Now add the gelatine to the cream and blend them well with a wire whisk.

Take out the container from the refrigerator and pour this mixture on the base, spread it evenly, now put some jalebis, again place the container back in the refrigerator for 3 hours to set.

Till then prepare the saffron-infused glaze, in a pan combine cornflour, sugar, and saffron water, blend them well so that there are no lumps remaining. Now put the pan on the gas and cook on low heat, stirring properly, so that it doesn’t stick to the bottom of the pan.

Cook it, until it turns thick and translucent, it will take nearly 10-12 minutes to cook, then switch off the gas and let it cool down. After 3 hours remove the mixture from the refrigerator, pour the mixture on top of the cheesecake, spread it evenly, at the time of pouring the glass ze need to be warmed then again place this container in the refrigerator for 2 hours to set.

Then take out the tin from the refrigerator, place the ready cheesecake in a dish. Put some jalebis on the top, garnish with a mint sprig, cut in shape and size you desire, and enjoy.
