If you are in for some continental food, then delicious Italian garlic soup is good to go with. Don’t worry, the pungent flavour of garlic will dissipate while cooking if you are not a fan of it.
This savoury flavoured soup is the perfect choice if you have a cold.
· 1 brown onion
· 2 medium sized potatoes
· 2 full heads of garlic
· 1 large leek
· 7 cups of stock chicken
· ½ tbsp of thyme dried leaves
· ½ cup of cream
· ½ cup of olive oil
· Pepper
· Salt as per taste
· 1 cup of chopped parsley
· For Croutons, 6 slices of rustic bread
1. Finely chop the medium sized onions and set them aside. Peel off the garlic cloves. Properly wash and chop the leek.
2. Heat a heavy pot or a sauce pan while setting it over a medium flame. Add some olive oil. Now add the finely chopped onions, leek and dried thyme leaves and let it sweat. Ensure that it doesn’t turn brown.
3. Add the peeled garlic cloves and set the flame low. Let it cook for around 15 to 20 minutes.
4. Until it cooks, peel and dice the potatoes. Along with the stock of chicken, add the potatoes too in the pot. Sprinkle it with pepper and salt as per taste. Let it simmer for another 25 to 30 minutes.
5. Now add the cream and mix it well. Then either blend it or use a stick blender directly in the pot for a smooth creamy texture.
6. Dice the bread and fry it in the olive oil on low flame until they turn crispy and brown.
Serve the croutons and chopped parsley with the Italian garlic soup.
