Don’t you think this simple, delicious carrot cake would look great on your Christmas family table? After a huge dinner, a freshly flavourful cake may be just the thing to present to your guests who are tired of normal basic cake.
Here is how you can prepare a delicious carrot cake for this Christmas
1. 1 cup extra virgin olive oil or any regular oil
2. 1 tablespoon of Plain yogurt
3. 4 eggs
4. 1 tsp. vanilla essence
5. Zest of an orange
6. Flour (two cups)
7. 1 & 1/2 cup sugar
8. A pinch of cinnamon
9. Nutmeg (1 tsp.)
10. 4 grated carrots
11. 1/2 cup of raisins
12. 1/2 cup minced walnuts
13. 2 cups sugar (finely ground)
14. Butter 1/2 cup
15. Cream cheese, 2 tbsp.
1. In a large mixing container, add the cooking oil. Combine the yogurt, eggs, vanilla essence, and orange zest in a mixing container. Whisk until the mixture is completely smooth.
2. Combine the flour, sugar, cinnamon, and nutmeg in a different container. Combine all of the ingredients and add in the previous mixture. Blend in the carrots, raisins, and walnuts thoroughly.
3. Pour the batter into a round cake tin. You can either make one big cake or two small cakes on top of each other. Preheat the oven to 180 degrees Celsius for the next 25-30 minutes.
1. Using a scraper, combine the granulated sugar and butter in a large mixing container. Blend the items with your beater after adding the cream cheese. Store in the fridge for 60 minutes before serving. Serve it with vanilla ice-cream for some delightful flavor.
