Because oxygen is highly reactive, it has a proclivity for combining with other molecules, resulting in chemical alterations that could damage the chips. Nitrogen, on the other hand, is a relatively stable and non-reactive gas. A ‘nitrogen atmosphere,’ it is thought, is beneficial, especially for keeping foods.
Many potato chips have a ‘best before date of 40 to 55 days before they grow stale, according to several potato chip makers. Without the use of artificial preservatives, the presence of nitrogen in potato chip packets helps to extend their shelf life. Furthermore, did you know that the air we breathe contains 78 percent nitrogen? As a result, there is no risk of the same having negative effects on our bodies.
Another reason to add air to our beloved bag of chips is to keep them safe from damage. Because potato chips are prone to breaking, the air pumped in the package functions as a “cushion” during shipment and transit. This entire procedure is known as slack fill,’ and it is followed by all chip manufacturers across the world.
